Coconut, Lemon and Almond Sponge with coconut frosting…moist AND gluten and sugar free….wha wha what?
Its been a delight being involved with Pokesdown Village Green Market, everyone seems very down to earth and there is a feeling of community here. Community is where its at for me, seems like something that has been in danger of dwindling away in the UK. Together we are more powerful. Together we can adapt and survive, and adapt we do need to.
Our health is increasingly under bombardment from toxins, metals and chemicals that we simply were not meant to process. I am astounded by the volume of people whom suffer from food intolerances, diabetes, leaky gut etc. I suspected so but I was not prepared for such a large ratio of people with these issues at the Pokesdown Village Green Market stall these last few months.

Coconut, carrot and courgette featuring sugar fre kirsch morello cherries…..oh my..
Lemon and almond loaf with plenty of zest!
I believe the biggest threat to our food chain right now is GM food, and sadly I suspect we are powerless to change what is happening in most of the world, our food supply is already greatly compromised. We are not entirely powerless, and being astute and ruthless in what we choose to purchase and eat is the first step. C’mon folks, lets up our games a bit, We need to start taking the steering wheel as far as our health is concerned, we no longer can expect our GP’s and the NHS to do everything for us. Lets begin with what we put inside our bodies, and take the focus away from the current obsession with what we look like externally. Food is our medicine.

The Banana and Chocolate sponge is nearly finished, could be the date and banana cream inside? hmmmmm
Sadly, but typically, it seems we are divided in our opinions about GM foods. There is always the devils advocate, and tho he or she usually revels in his or her provocation with their contentious opinions, where would we be without them?
So we are fed the justification to accept GM food because… ‘It can feed the world’.
I don’t know much, but I suspected that food volume was not the issue, that it was really about greed and politics, no?
Well I’m trying to understand, and found that this Greenpeace youtube vid was a good start: http://www.youtube.com/watch?v=1H9WZGKQeYg
In the meanwhile, all I can think of doing is upping my game by showing what we can make using healthy alternatives, that if we use a little imagination, and begin to care about ourselves a bit more, we can have our cakes and eat them.
