Loosening up in the kitchen today......

Mocha Pecan Puds.

Jeez, its about time too. I wanted to find a recipe for something chocolatey and coffee-ish, but sometimes the more I look the more I cannot see, too much information that internet highway. I switched the computer off all day and set out to spin a few freestyle numbers and this is one of the outcomes…..creativity being my only strong point, sticking by the book my stumbling block. Work with the strong points Lubix.

200g Ground Almonds

50g Spelt Flour

100g Chopped Dates

100g Pecans

100g Dessicated Coconut

3 TBSP cocoa powder

1 tsp coffee powder

2 tbsp xylitol

Icing:

1 tbsp coconut oil

3 tbsp cocoa powder

2 tbsp xylitol
